in the last weekI think this is the most genuine 5 star review I have ever given a restaurant. Took my wife here for her birthday and we both walked away feeling like this was one of the most impressive dining experiences that either of us have ever had. I've eaten at plenty of Michelin stared restaurants but these guys nailed it in so many respects. Service was absolutely top notch. Everyone we interacted with was incredibly passionate about their role and knowledgeable when it came to the fundamentals of what they were offering. The whole experience was structured in such a way that it truly felt like a journey through the chosen ingredients that were introduced at the outset of the evening. The wine pairing was amazing. Each of the wines were unique in their own attributes and went so well with each of the respective dishes. We walked away with a couple of wines that will become mainstays in our collection. It's clear that so much thought was imbedded in every aspect of the experience. 80% to 90% of the courses were simply jaw dropping and the rest were extremely respectable. No complaints about any of the courses. The price of 350 EUR per person with the pairing is steep but when considering the overall quality, care and experience, it felt like a value. We look forward to our next visit next time we are in Madrid. A special thanks to Thomas and the whole team that made the evening so remarkable and memorable.

2 weeks agoIt was truly more of an experience than a dinner. I have been to several Michelin restaurants, but this was something special. They emphasized multiple times how a single ingredient can be prepared in different ways and how it can be experienced. It is nice to compare. Of the classic 13 courses, one course with squid was slightly less impressive than the rest, but that might be because I am used to fresh squid from Japan. The staff was professional and friendly. One female colleague's English was too Spanish, making it difficult for us to understand. Good explanation of the wines. We will definitely be back.
