We chose HAERLIN primarily because of the prospect of experiencing a three-Michelin-starred restaurant. A restaurant of this caliber promised to be a truly special experience.
The location, in one of Hamburg's premier buildings, is undeniably impressive. The tables and chairs were exceptional. The service was very attentive and thoughtful.
We were particularly impressed by three of the six courses, which were presented with twelve items on the menu. The first course, consisting of three items, arrived promptly without any prior consultation: foie gras, Parmesan crustade, and Gillardeau oyster. The subsequent butter-making ceremony was a wonderful prelude to the sourdough bread and Japanese milk bread, which was served with Imperial caviar.
The first highlight was the confit prawns, outstanding in both flavor and presentation. This was followed by fish from Lake Müritz and John Dory. The highlight was a menu we swapped: saddle of venison from Stefan Runge, followed by a Canadian Whisky Sour dessert – simply perfect!
They always say three stars mean a restaurant is worth a special trip, but unfortunately, we couldn't quite agree with that during our visit; we weren't entirely convinced.
Now we've experienced the Michelin categories, from many one-star restaurants to several two-star ones, and finally to one three-star restaurant. For us, the conclusion is rather sobering – this is just our subjective opinion, though. Other guests will certainly have a completely different experience.
The service was truly outstanding! We found the prices reasonable for this level of quality.
Being a guest at Restaurant Hearlin is a truly special experience. When we made our reservation, we booked the option of a kitchen tour. This allowed us to get an up-close look at the Michelin-starred kitchen and observe the team at their meticulous work. After amuse-bouches and a glass of champagne, we were shown to our table. The entire service was absolutely attentive, very personal, and flawless in every way. The quality of each course was unparalleled in both taste and presentation. We opted for the wine pairing. Several white wines, a red wine, and sweet wines were served with the desserts, and the sommelier expertly introduced us to their flavor profiles. The evening was rounded off with wonderful cakes and chocolates. Water and coffee were also included. Mr. Rüffer made a point of visiting each table at the end of the evening and taking the time for a thorough conversation. A thoroughly enjoyable evening in a unique setting.
